Rosemary Garlic Lamb Chops with Roasted Veggies

Ingredients:

  • 4 lamb chops (French-trimmed)

  • 2 cloves garlic, minced

  • 1 tbsp fresh rosemary, chopped

  • 2 tbsp olive oil

  • Salt & pepper to taste

  • Mixed vegetables (suggestion: carrot, parsnip, sweet potato)

Instructions:

  1. Rub lamb chops with garlic, rosemary, oil, salt, and pepper.

  2. Let marinate for 30 minutes.

  3. Roast chopped vegetables at 200°C for 30–35 mins with olive oil, thyme, and seasoning.

  4. Grill or pan-fry lamb chops for 3–4 mins each side.

  5. Serve chops on roasted veggies. Enjoy with a bold red wine!
