Rosemary Garlic Lamb Chops with Roasted Veggies
Ingredients:

4 lamb chops (French-trimmed)

2 cloves garlic, minced

1 tbsp fresh rosemary, chopped

2 tbsp olive oil

Salt & pepper to taste

Mixed vegetables (suggestion: carrot, parsnip, sweet potato)
Instructions:

Rub lamb chops with garlic, rosemary, oil, salt, and pepper.

Let marinate for 30 minutes.

Roast chopped vegetables at 200°C for 30–35 mins with olive oil, thyme, and seasoning.

Grill or pan-fry lamb chops for 3–4 mins each side.

Serve chops on roasted veggies. Enjoy with a bold red wine!
