Lemon Herb Chicken Breast Steaks

Fresh, zesty, and perfect for warm evenings.

Ingredients (serves 4):

  • 800g–1kg chicken breast steaks (or slice whole breasts into even 1.5–2cm thick pieces)

  • 2 tbsp olive oil

  • 1 lemon (zest + juice)

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp paprika

  • Salt & pepper

  • Fresh parsley, chopped (to garnish)

Method:

  1. Mix olive oil, lemon zest, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper.

  2. Coat chicken breast steaks and marinate for at least 20 minutes (longer = more flavour).

  3. For BBQ: Grill over medium-high heat for 3–4 minutes per side until lightly charred and cooked through.
    For pan/oven:

    • Pan fry 4–5 minutes per side, OR

    • Bake at 200°C for 18–20 minutes.

  4. Rest for 3 minutes, then top with fresh parsley and a squeeze of lemon.

Serving Tip:

Pairs perfectly with salads, couscous, or roasted veggies for an easy summer meal.
