Ingredients
- 1 Beef Eye Fillet
- 2 tbsp unsalted butter (room temperature)
- 1 tbsp salt
- 1 tbsp coarsely ground black pepper
Method
- Preheat oven to 260°C.
- Place the Eye Fillet on a sheet pan and pat the outside with a dry paper towel.
- Spread the butter over the meat with your hands. Sprinkle evenly with the salt and pepper.
- Roast the meat in the oven for 22 minutes for rare and 25 minutes for medium-rare.
- Remove the beef from the oven, cover it tightly with aluminium foil and allow it to rest at room temperature for about 20 minutes.
- Slice the fillet thickly.
- Serve with you choice of sides. Our favourite is oven roasted vegetables.
