Fillet of Beef


  • 1 Beef Eye Fillet
  • 2 tbsp unsalted butter (room temperature)
  • 1 tbsp salt
  • 1 tbsp coarsely ground black pepper


  • Preheat oven to 260°C.
  • Place the Eye Fillet on a sheet pan and pat the outside with a dry paper towel.
  • Spread the butter over the meat with your hands. Sprinkle evenly with the salt and pepper. 
  • Roast the meat in the oven for 22 minutes for rare and 25 minutes for medium-rare.
  • Remove the beef from the oven, cover it tightly with aluminium foil and allow it to rest at room temperature for about 20 minutes.
  • Slice the fillet thickly.
  • Serve with you choice of sides.  Our favourite is oven roasted vegetables.
