Aussie Lamb Cutlets with Minted Yogurt Sauce
Ingredients:
- 8 lamb cutlets
- Olive oil, for brushing
- Salt and pepper, to taste
- 1 tablespoon rosemary, finely chopped
- 1 tablespoon garlic, minced
- 1 cup Greek yogurt
- 2 tablespoons fresh mint, chopped
- Juice of 1 lemon
- 1 tablespoon honey
Instructions:
- Preheat your BBQ or grill to medium-high heat.
- Brush the lamb cutlets with olive oil and season with salt, pepper, rosemary, and garlic.
- Grill the cutlets for 3-4 minutes per side, or until your preferred doneness is reached. Lamb cutlets are best served medium-rare to medium.
- While the lamb is grilling, combine the Greek yogurt, mint, lemon juice, and honey in a bowl to make the sauce.
- Once the lamb cutlets are cooked, remove them from the grill and let them rest for a few minutes.
- Serve the cutlets with the minted yogurt sauce and a side of roasted veggies or a fresh salad.
