Aussie Lamb Cutlets with Minted Yogurt Sauce

Aussie Lamb Cutlets with Minted Yogurt Sauce

Ingredients:

  • 8 lamb cutlets
  • Olive oil, for brushing
  • Salt and pepper, to taste
  • 1 tablespoon rosemary, finely chopped
  • 1 tablespoon garlic, minced
  • 1 cup Greek yogurt
  • 2 tablespoons fresh mint, chopped
  • Juice of 1 lemon
  • 1 tablespoon honey

Instructions:

  1. Preheat your BBQ or grill to medium-high heat.
  2. Brush the lamb cutlets with olive oil and season with salt, pepper, rosemary, and garlic.
  3. Grill the cutlets for 3-4 minutes per side, or until your preferred doneness is reached. Lamb cutlets are best served medium-rare to medium.
  4. While the lamb is grilling, combine the Greek yogurt, mint, lemon juice, and honey in a bowl to make the sauce.
  5. Once the lamb cutlets are cooked, remove them from the grill and let them rest for a few minutes.
  6. Serve the cutlets with the minted yogurt sauce and a side of roasted veggies or a fresh salad.
